Asparagus Pie

Much like a quiche!
Ingredients
- ½ lb. fresh asparagus
- 2 eggs
- 4 Tbsp. melted butter
- 1 c. cottage cheese
- 1 c. sour cream
- ¼ c. flour
- ½ tsp. baking powder
- ¼ tsp. salt
- 1 tomato, thinly sliced
- ¼ c. Parmesan cheese
Instructions
- Preheat oven to 350 degrees
- Steam asparagus until tender, about 3 minutes; arrange in a spoke design on the bottom of a buttered 9" pie plate.
- Beat eggs until frothy. Add butter and cottage cheese; beat until almost smooth.
- Mix in the sour cream, flour, baking powder and salt.
- Pour on top of the asparagus; arrange the tomato slices on top
- Sprinkle with the Parmesan
- Bake for 30 minutes, or until set and lightly browned.
- Remove from oven and let stand for 10 minutes before serving
