A true American tradition.
Ingredients
- 3 c. fresh blueberries
- ½ lemon
- 1⅛ cups white sugar
- 4½ tablespoons butter, softened
- 1½ c. all-purpose flour
- 1½ tsp. baking powder
- ¾ c. whole milk
- 1½ c. white sugar
- ¾ tsp. salt
- 1½ Tbsp. cornstarch
- 1 pinch ground cinnamon
- ¾ c. boiling water
Instructions
- Preheat the oven to 350 degrees F (175 degrees C)
- Lightly grease an 11x7 inch baking dish
- Spread blueberries to cover the bottom of the baking dish
- Squeeze lemon juice over berries
- In a medium bowl, stir together butter and 1⅛ cups sugar until smooth
- Stir in flour and baking powder alternating with the milk until smooth; batter will be thin
- Spoon evenly over the berries
- In a small bowl, stir together 1½ cups of sugar, salt, and cornstarch
- Sprinkle over the top of the batter
- Dust with a pinch of cinnamon, then pour the boiling water over the entire dish
- Bake for 45 minutes in preheated oven or until golden brown
